    Crystal clear pale yellow. Driven from the start by yellow orchard fruit and even a touch of pineapple. There's a green herbal note throughout - mint and eucalyptus. With 6+ hours of air, picks up more typical Chablisienne qualities with iodine, crushed shells. The palate carries a lot of the orchard fruit and eucalyptus, but also gains some crimini mushroom and iodine with significant air. Medium plus acid, this is quite fruit driven, with that distracting green tinge throughout. A pristinely kept bottle, but no where near as interesting as an '04 MdT this time last year. This bottle simply reinforces my apathy toward Vaillons as a whole - the first mediocre '04 Chablis I've come across in well over 2 years.

  • Served double blind. Immediately upon smelling and tasting this, I went to sauvignon blanc -- it had that distinct of a green note (and reading some of my notes from five years ago, something that I didn't pick up on back then). Sure, it was rounder than a typical example, and admittedly playing the player a little bit, I guessed that this was a St. Bris! The fruit is incredibly fresh here, and I would never have pegged it for being so old. However, the green note actually seems to grow slightly more prominent with air and that really detracts from the enjoyment of an otherwise primordially fresh bottle of chablis.

  • Ung, slank med god konsentrasjon. Sitron, sjø og østers. Nydelig balansert vin. Trenger kjellertid eller mye luft.

  • Luftet en time i karaffel. Elegant duft og svak med tydelige Raveneau-toner. Lukt av frisk sitrus, sjøsprøyt, gule epler og snev av østers. Smaken var mindre moden enn forventet, mild sitronkaramell, mer honningmelon enn honning, svak nøttearoma og kaldt sjøvann. En velbalansert vin med avdampet fruktighet, middels syre og lang smak. Jeg synes denne vinmarken er en av de mest elegante i Chablis. Fungerte strålende til pannestekt sjøkrepshale med fennikel-salat, smaksatt med syltet estragon og lime.
