  • Very much alive and kicking. Total crowd pleaser, a Chardonnay with obvious stuffing yet generous and giving. Would please francophiles and CA fans alike.

    Served with grilled rockfish, grilled calamari and braised fennel, white beans, avocado and oranges. Total CA meal, very French wine = absolute hit!

  • 3rd and final bottle, and this is has been a joy all three times, being perhaps the best showing of the three. Perfectly ripe Granny Smith apples provide a welcoming and voluptuous entry way, imparting both sensuality and citrus tinted freshness. As it warmed, a spearmint trait emerged and the finish displayed more ‘classic’ Chablis traits – tide pool, that kind of thing. I usually find the maritime stuff to occur early on – and a Chablis richer traits to come on the back half, but it seemed to be reversed here. Certainly in the zone, should hold for 5 years or so. Most excellent.

  • Vinho muito bom, de cor amarelo médio e aromas cítricos, como limão e grapefruit maduros, abacaxi, algo floral, mel, salinidade característica dos Chablis, com pedras molhadas também. Na boca é levemente untuoso, confirmando a fruta e a salinidade, com amêndoas tostadas. Acidez alta e final longo. Acusa tosta leve. Os Chablis 1er Cru e Grand Cru são grandes aquisições quando se trata de Chardonnay.

  • Solid 1er Chablis, good tang, nicely-developed body. Texture seems a bit fatter than in younger bottles - an improvement, IMHO. Pleasant but light Chablis tang, which, I think, is terroir-appropriate for Vaillons. Acidity is fresh and refreshing, balance is good. Not past its prime, methinks, but perhaps nearing the end of its plateau. CT inventory says I have three more bottles, and I'll try to drink them in the coming year or so.

  • However the stars were aligned last night, this bottle was positively on point. The maritime traits such tidal pool water and other saline attributes were a background player to a rich and generous core; distinct chamomile and perhaps some yellow plum hiding in there as well. Never in doubt structure wise, acidity was sound and sure, but its tactful delivery of a powdery stone quality all the way to the finish sealed it for me. In the zone.
