Jadot (and Clair Dau) Chapelle-Chambertin Dinner with Thibault Gagey (Sepia - Chicago IL): In vertical. This is NOT the domaine bottling we all know and love, but rather a negociant cuvee they have occasionally made. Unfortunately found out when I opened the 6-pack. Still tasty, with the elegant balance of the vintage and classic Gevrey black fruits plus meat, but lighter than expected.
Wonderful bouquet of gooseberries, cherries, mint, spices, crushed stones. Silky palate of ripe cherries, sweet with some gentle crunch and freshness, relatively dark-toned initially becoming more ethereal over time, lighter, with a fantastic finish. Great to drink with a bit of air, even better on second night.

Well this needs to be put away for 10 years. A high quality wine but simply not ready even after a 2 hour decant. There is a real class to this wine but not to be drunk yet

Stellar bouquet of ripe berries such as goose- and red cranberries, mineral tones such as rain on a street, vanilla, baking spices. Palate mirrors the bouquet with quite some tannins and acidity / freshness, followed by a deep inner sweetness leading to a long finish. Still feels young with a few years to get to an even higher level. Has this 2010 stuffing, ripeness and structure. Although too young this wine really blew me away.

Decided towards the end of tasting to open this 375ml. It was definitely too young but seemed like it was just starting to come out of a slumber. Lots of dark, good fruit. And has potential. 92-93 today. 95+ potential that it may or may not reach. I would give 375ml's at least another couple years. And full bottles, at least 5-7 years
