It takes a bit of coaxing from the glass but it’s worth it - you’re rewarded with concentration and complexity in spades. Ripe fruits, honey, burnt pastry, smoke. The finish is long and luscious.

Not a style of Sherry I was previously familiar with. On opening it’s a bit superficially grapey, but with air it shows layers of juicy honeydew melon, burnt caramel, orange, custard - at times it was like drinking liquid creme caramel. Would go beautifully with a ravishing platter of fresh fruit or lighter pastry desserts.

Rich and dense, with aromas of dark caramel, figs and candied fruit carried through to the palate where some fresh acidity makes for a clean long finish.
