RIP Blake, 12/26/99-3/21/14, Royal Order of Best Dog Ever. Here's a wine from your birth year, to honor you. Why this wine? Because '99 is better in Burgundy than anywhere else (well, I admit, I feel this way about every year), and you were better than any dog I've ever known, just like every other beloved dog is for his/her family/master. And because a pun is always necessary, I'm throwing in a Combes because no animal on this planet ever shed more than you.
Old but sturdy, like a slow walk in an old forest, just-turned berries, blood, iron, damp leaves. Enough strength to show the muscular frame that was once there, little enough to see it's on the decline. Goes well with food (how true is that!), in this case a nice piece of salmon. Mature burgundy, an old Lab, that's pretty good company while they last. So long old boy.
It only takes one bottle of mature Burgundy in beautiful condition to erase the memory of a dozen disappointments. Here's one tonight. Treads a lovely path between ripe red fruits and forest floor. Gentle spice notes (what soft incense hangs upon the boughs) mingle with the underbrush and whispers of smoke. Graceful elegant mouthfeel. Maintains its composure through several hours of slow sipping.

This was delicious. "Velvety" was the preferred adjective of the night. It was the inspiration for a mushroom risotto and seared duck breast with port demi that was a great match. Didn't have too much of a chance to ponder this one as it was drank with company, but my impressions were of less stuffing than the 05's I have been drinking of late, but just great balance. A nice perfume, though there was noting overwhelming about this wine- just pleasureful and all you can hope for in a burg of this price.
