Palette: High, bright & electric acidity; fine fizz of bubbles; low + body; notes of raw almond, lemon, cream, parmesan cheese; long finish of almond, yellow apple, lemon, mushroom.
Overall: Very different. Complex and though provoking. Lots of layers.

Method: opened 15 minutes in advance; Grassl Mineralite; very little pop upon opening; 45 degrees
Look: medium+ gold, almost bronze; high viscosity with high amount of slow, thick, legs; a bit more than one stream of fine slower bubbles
Nose: umami, mushroom, parmesan cheese rind, light biscotti, light cream, walnut, dried lemon, dried apricot; the nose is complex and fairly unfamiliar to me
Palate: parmesan cheese, walnut, nutmeg, mushroom, rye bread, dried apricot, hint of dried lemon; long finish of finish chalk, white pepper, mild salinity; dry; medium+ body; high acidity that I notice much more on the finish where it leaves a slightly searing or electric imprint, rather than on the attack and midpalate; low+ amount of medium strength very fine bubbles that feels more like an agressive fizz than typical lively Champagne mousse
Overall: Complex, savory and a bit funky. Very nice body. More mature tasting and feeling than I expected. Very cool, but I might appreciate it a bit more than I enjoy it. A great and distinct wine.
Day 2 update: bubbles are pretty much gone, but there's a really nice honeyed note that I'm digging.

Heavy but really tasty champagne. Apple and pineapple on top of strong mineral notes. Reminds me of aged Cristal.
