Opens up on the finish with lots of lime zest bitterness on the finish and leaving a very pleasant saltiness on the lips. Opening up well in the glass, but should reward further cellaring. Full and quiet rich nose. Developed. Ripe apple, biscuit and butter. Medium-fullish, rich and developed palate. Fine balance and properly austere with high acidity. A tad fleshy. Ripe apple, hints of dark chocolate and cream. Good now and for 5+ years.

(Disgorged in 2015, 100% Pinot Noir from Bouzy, dosage 5 gr/L) Light yellow colour with a stream of fine bubbles showing incipient maturity on the nose with hazelnuts, roasted coffee and chalk and opens up with lime citrus flowers and hints of butterscotch and some ginger notes in a very nice and pleasant way. Still showing a refreshing and youthful citrus acidity that starts to smooth out and with some creaminess before the finish with a bitterness and hints of butterscotch note in a delicious way. This is showing really well right now, but no rush as it should keep developing in a delicious way for many years to come.. (Best 2023-2038)

Family dinner at home. This wine opened fresh and flavoursome with a fine bead and light golden colour. The nose is complex with strawberry, white cherry, arrowroot biscuits and lemon zest. The palate has nicely rich fruit providing good density and drive into the savoury mineral and cashew nut touches on the finish. A delicious mouth filling Champagne.
