Look: deep orange-gold; vigorous stream of bubbles
Nose: browned yellow apple, pear, French toast, bread dough, caramel
Palate: butterscotch, pear, banana bread, bread crust; long finish of chalk, toasted almond; dry; medium body; medium strength and amount of bubbles; medium acidity
Overall thoughts: Great nose, good concentration, really good flavor, and good complexity. The mouthfeel is fun because of the bubbles, but it doesn't stand out for a sparkling wine. Great wine.

Great birth year wine I was able to pick up for a friend for $35! Smells 27 years old with lots of almond, baked apples & pears. Palate was 10 years younger - still had nice acidity and creamy citrus & stonefruit.

Served this blind for a bit of fun. Very developed but by no means over the hill, still very fresh. Flavours of caramel, hazelnut and dried fruit with a fresh palate and still with lively bubbles. Delicious wine and really got everyone talking.

A: Deep Antique Gold N: Oxidized apple, stone (minor), persimmon, meyer lemon, baked almonds, pear, brioche, honey, burnt sugar and toast. Developing. Still room in here for growth in complexity. Pronounced intensity. P: Dry, high acid, medium (-) alcohol (12%) , medium (+) body, pronounced intensity and medium (+) finish. 100% Pinot meunier (omg!) C: Outstanding Quality wine. The star of the night!!! some found this fully developed but i think this would have even more to give in 5 years. Drink or hold.
GUESSES: Vintage Champagne
MISTAKES: Again, i thought the stone was more dominant than it actually was. The quality and the age on this threw me to champagne region but its just a bloody good aged american sparkler and i would drink this over most champagnes in a heartbeat. This bottle has been a real eye opener.

Wine Dojo - Week 14 - Hubble Bubble Toil, No Trouble! (Elissa's Place): Blind Tasted
