  • Chateau Biawak Chapter 9: SONOMAvatar - The way of water (Chateau Biawak, Singapore): 14.5% ABV. The grapes that go into Côteaux Nobles come from some of the highest parts of the Nobles ranch vineyard, from between 400 and 450m above sea level. 14 months in French oak, bottled unfined and unfiltered. The warm 2012 vintage led to decreased acidity and elevated alcohols on the top of the ridge, so the winery does not feel that this wine is an accurate representation of Luc’s winemaking style and ability of Luc Morlet, and advised that it is not the best ambassador for Morlet’s Pinots.

    Blue fruit and black fruit, pine forest, crème brulee, nutmeg, clove, star anise, hawthorne, almost like a cross between hermitage and burgundy. If this is ‘not the best’ of Morlet, I must say they have high standards. If not for the alcohol heat and slightly less-than-bright fruit, this would have been an absolute showpiece.

  • dark cherry, blueberries with notes of stawberry and raspberry. Floral notes and spice finish the palate. 14.5% ALC is carried by the fruit. Wine has a lot of acidity! I am generally not a fan of this much acidity but his is a well made wine and it cut right through the fat of Alfredo sauce. This wine is moving into a sweet spot. This has plenty of years in front of it.

  • Blueberry, blackberry, and raspberry yep, a whole crop of berries in this beauty. Stong acidity is the backbone of this wine. With food the acidy rocks, as a sipping pinot, i'd like 5 more years for the tannins/acidity to soften and not show off so much. This wine has a lot of oak on it, perhaps a bit too much but I hope that tames with age as well. This wine will tell you, "I'm the CEO!, not temp employee" May be enjoyed for years to come.

  • Scrumptious and seductive fruit. Freshly sliced plum, crème brûlée, dark spice, oak and flower shop. So much intrigue and flamboyant persona,’this reminds me of how luscious Sonoma Coast Pinot can be. Quite glowing and lovable, this has years left. Classic and wondrous. Drink now - 2028

  • kind of mystifying. To me this take like a synthesis of hermitage and burgundy, with fine elegance but deed, salty and meaty notes. Really odd and totally delicious.
