  • First glass. Notes of cherry, damp forest floor and mushrooms on the nose. Has a flavor profile of raspberries, earth, leather, mushrooms, leather and floral notes. 10-15 second finish. Second glass: Nose is more opened with the earthy notes being a bit more pronounced. On the palate the fruit is more pronounced with a midpalate of strawberry, but with the same earthiness in the background throughout. Silky mouth feel. Finishes out dry and floral. Third glass: On the nose I'm starting to get an aroma that I can actually call barnyard. The flavor profile is more open and intense. The finish is a bit longer now. 20+ seconds. Fourth glass: Barnyard is even more pronounced on the nose and also coming through on the flavor profile.
