In a great place now. Drunk over 2 days, paired with pasta, eggs with mushrooms, and scallops. Notes of brioche @nd lemon curd on the nose. Palate is expressive, with a wonderful salinity balancing the rich breads flavor with hints of apple and lemon. Long finish and pairs beautifully with salty food.

Medium dark yellow-gold, intense heady nose at first, bread dough, perfectly ripe yellow apple, pear, quince; chalky minerality with a hint of steeliness. Super fine bubbles, great intensity, good acidity but not aggressive and not too much despite the fact this is just a gram or 2 dosage. Aged in Austrian barrels, biodynamic, native yeasts, from two "chemin" vineyards in Avize. Great with homemade fried chicken.
