Bubbly at Green Street Smoked Meats (Chicago, IL): Disgorged May 11, 2015, 3 g/L of dosage. The effervescence here is pretty potent; maybe a little bit too exuberant. Coarse bead, with tons of chalkiness and a nice touch of sweet white fruit. This time around, I felt the wine was almost a bit too bracing and acidic. When I revisited this, it didn't seem like it fleshed out too much.

Nase mit Apfel, der sich am Gaumen fortsetzt. Schöne starke Säure, sehr frisch. Brioche, schön schmelziger Abgang. Ausgezeichnet.

Second bottle tasted. Steely. acid backbone, and with a bit of a chalky soil in the finish. Better the second day as the fruit showed more.
