Charles Dufour Champagne Tasting (Kallang Way Extra Space): Tasted blind. Initially very very tight, so was poured into a decanter and aired. Appearance is clear, pale intnesity, lemon colour. Hardly any bubbles (could be the effect of the decant). Legs. Nose is clean, medium- intensity, with aromas of seashell minerality and citrus lemon. Developing. On the palate, dry, high acidity, medium- alcohol (12%), medium body. Medium+ flavour intensity, with flavours of citrus lemon, seashell minerality, salty minerality. Long finish. Very good quality. Holds promise for the future. At the moment, this is pretty austere and the feeling is just citrus lemon + minerality. Paired very well with oysters though. Will be interesting to see how this develops over the next 5+ years. 100% Pinot Blanc. Disgorged 18th May 2016. First time trying a 100% Pinto Blanc champagne. Hmm does Pinot Blanc have enough complexity on its own?
