At Caveau de Arches in Burgundy. Another great dinner.
Red & black cherries, blueberries, high acid, low tannin, - seems out of balance now where if opened earlier the concentration would balance out the acid. Now I would hold allowong for the acid to calm down a bit and get back in balance - but what the hell do I know.

I could not keep myself from tapping into another one of these bottles. Similar showing as in May 2020. Perfectly balanced and just the right amount of sappy and spice to make for a beautiful earthy black cherry and cinnamon stick surprise. I personally love the dollop of extravagance here. The perfect amount of saturation.
Great now with some air; better yet, hold for a few years. 95+ points.

Generous with the black cherry fruit, with burnt orange rind, smokey earth, and spice notes. A tick of extravagance mid-palate is perfectly counterbalanced with extraordinary acid. Notable speed and verve while also kicking out tasty ripe red and black cherry flavors. Another Boillot success. Drinking remarkably well now, with upside after a couple of years. 95+ points.

Nose tells you right away this can only be Burgundy. Lots of finesse, but quite young. Lay down for a few more years or give a long decant.

Very gourmand texture with oak spice, pine resin, and red currant. Dry and polished.
