  • A very Rhone like nose with herbs, black pepper and cured meats. With breathing, some underlying violets come through. The palate is of medium weight with an acid spine to support the oak and spicy fruit. This is an appealing wine that benefits from time in the glass and may soften on the mid palate with three or four years in the cellar.

  • Dinner at Chairman and Yip (Chairman and Yip, Barton, Canberra): The appearance is clear and medium ruby in colour. Tears are visible.

The nose is clean. The aromas have a medium(+) intensity and show well-defined notes of floral characters (violets), pungent spice (black pepper), black fruit (black cherry), and oak (chocolate, vanilla, subtle cloves). The wine appears youthful.

On the palate, the wine is dry with medium acidity, medium(+) alcohol, and medium body. The medium level tannins are ripe and velvety in nature. The flavours have a medium(+) intensity and show notes of oak (vanilla, chocolate, cloves, subtle nutmeg), pungent spice (black pepper), and black fruit (black cherry). The finish has a medium length.

This wine is of an acceptable quality. The nose was very impressive with very well-defined notes hinting at a very good varietal definition. The flavours however were dominated by the oak treatment, with the primary fruit remaining in the background. That said, the flavours were concentrated and had a great balance with the alcohol. The velvety tannins also had a great balance with the acidity. In its current state, the wine showed primary and secondary characteristics, and had a finish with good length.

[Note: the food pairing was able to shift the focus of the wine back towards the primary fruit in a very interesting way.]
