  • med gold; oxidative notes dominate nose, w/orange peel & citrus flower beneath; med+ weight; honeyed & floral palate leads to intense citrus acid profile.
an advanced bottle, 5th of 6; not undrinkable, & in fact, the acid profile played well enough w/dinner.

as an added bonus, the bottle included two bits, approx. .5 mm each, of volcanic glass; no, not tartaric crystals, genuine little black chunks of etna material.

fusilli w/zephyr squash, sheep's milk ricotta & parm, herbs & pistachios

  • Pale but approaching medium yellow. Subdued nose dominated by minerality over fruit. In mouth minerality also dominates fruit. Good acidity. Acid dominated finish. While pleasant it fails to enchant me. Probably due to a shortfall in nuance snd elegance. Seems quite young and CT drinking window is too short. Beware of fine tartrate crystals..

  • two years since last one. notable positive evolution since then, but even more so in the glass tonight; still pale straw, more aromatics as it warms, mostly restrained citrus & pear skin; elegant & quite wonderful lemon, faint touch of bitterness & a steely mineral spine; should continue to be genuinely pleasurable; don't have experience with aging these but a solid showing tonight encourages holding.

crispy triggerfish w/lemon anchovy brown butter & capers; roasted romanesco & Treviso

  • Two more - but better - Terre Neres: Carricante 100%. Vines 40 -100 years old on deep, soft and dark volcanic soil, rich in volcanic ash. From the northern slope of Mount Etna 700 -750 metres above sea level. Drunk over three evenings, at its best on the second night. Bright pale gold. After a touch of flinty reduction, peach, rock melon, pineapple and pear aromas, with suggestions of blanched almonds and cut, green herbs. Comes to life with food. Crisp, focussed acidity. Lovely rocky minerality and salinity. Bone dry but relatively rich, viscous and tactile. Relatrively complex flavour profile: Green and yellow apples, fresh herbs and a little backing spice. Drink or hold.

  • Tenuta delle Terre Nere (CAVE SA, Switzerland): Some reduction on the nose, later blowing off. Here you do get notes of butter (the whites go through full malolactic fermentation). Some notes of honey and ripe apples
There is a bit more balance than the 17s, less tension though and hence feels a bit flabby.
