  • March 2021 disgorge. needs a half-hour plus aeration to open up.

    golden yellow with a very fine mousse and seemingly disappearing bubbles. a mix of fresh and baked apples is its nose signature, augmented by hazelnuts and sweet brioche and a salty and floral spray. creamy, dry, fresh, mineral and full in the mouth… and with quite a bit of autolysis around the main pomme core: layers of nuttiness, of lemon and its pith, of Manuka honey meld together. incredibly long finish with alternating sweet and savoury turns.

    mature, rich, well balanced, not overly yeasty or acidic and with some hints of oxidation starting to creep in. lovely with food now. as with all late-disgorge champagnes, it won't improve with more age, so drink up.

    12.5% AbV; 80% CH/ 20% PN from a single vineyard; barrel fermented; fifteen years on the lees; no info on dosage, but feels very low (~4-6g/L).

  • This had a wonderfully complex aged nose without a hint of oxidation; slightly darker, with toffee, nuts, shrooms, bruised apple, cookies; fine bubbles, and med body (compared to the '13 Launois BdB Special Club was riper, richer, a bit more intense and of course fresher). Fantastic stuff and went well with toasted crackers and caviar, but straight caviar was best w/the BdB. So was the crab salad. Really fun comparison, both quite good. Best order was the Launois BdB then the '04 Fallet. The other way didn't work so well. Solid 92, 92+

  • Disgorged 2021 80/20 Chard/Pinot Noir. Medium Golden yellow (Wife says golden hour). Honeyed, appley nose. Rich ripe yellow fruits drizzled with honey on the palate. Great high acidity and sharp bubbles to balance. Bread and yeast notes come out as it warms. Nicely oxidized with an undertone of bruised apple but not front and center. Very balanced and drinking great. Not really showing too much of it's age. Could probably go another 5-10+ years and get even richer, but doesn't necessarily need it. Paired great with Mitsuwa market sushi! Lovely wine.

  • Medium-deep yellow-gold color. Brioche, apple cider, light pear on the nose. Very dry, high acidity, yeast, apple cider, light funk, slight orange peel on the palate with 30-35 sec finish. This was my first aged champagne - personally I prefer something more fresh with a tad more sweetness.

  • Perhaps bottle variation but the funk discussed below seemed to dominate this wine, which I personally did not enjoy.
