Fascinating wine. Closer to Tondonia Blanco or Cotes du Jura than your average "rosé all day" rosé, so people buying this because it says "Cotes de Provence" on it, should be aware of what they're getting into.
Apricot, ginger, candied orange, honey. A touch of red apple oxidative zing. Unctuous, waxy texture. Medium acid. Stellar with food: Paired fabulously with saffron risotto, pan seared red snapper and shrimp and grits. Only negative is that it feels a bit hot on the palate, but air and food minimizes this.
Should be able to age for some time.

Low acidity, but fascinating notes of celery, cumin, flint, along with orange zest, strawberry and watermelon.
