Pop and pour. In the glass, light yellow-gold, very fine bubbles. On the nose, apples, primarily green, but a little red apple sweetness in the mix. On the palate, green apples, bread, and a secondary note of passionfruit, with a clean, bracing finish.

Moist earth, yeasty, bread dough, green apples. Lovely acidity. Fine bead. Finishes long, long, clean with bracing acidity and a bit of warm spice. Disgorged January 2017. Lots of depth here and very enjoyable.
