Colour is the lightest among the recent Tahbilk Reserve (1997-2000) tasted despite it is the youngest among all. Medium dark ruby with brick and faded hues. Initially toasty vanilla nose open up to show black cherry, blackberry, smoke, earth, grill meat and black pepper. On the palate, soft and mellow but does not show as richly flavored as previous vintages, more red fruited than black as the nose suggests, along with plum, some earthy mushroom notes and hints of leather. Soft tannins with medium length finish. Already showing developed notes with soften structure, 2000 seems to be a weaker vintage that can be drunk now or sooner.

3rd bottle after '98 & '99. Decanted and drink over 3 hours. Dark garnet with crimson hues, it has aroma of cherry, dark fruits, earth and spice. Elegant mouthfeel with fresh acidity although leaner than '98. The palate was smooth, with cherry, vanilla, cedar and some earthiness. Medium finish and soft tannins. This was the weakest among 3 Tahbilk Reserve I have tasted, probably the reflection of the vintage. Some afterthought: I did not feel the alcohol as high as normal Shiraz so I checked the alcohol contents of each vintage and surprise to find ALC% is different for 3 vintages: ~ 1998: 14.5%, 1999: 14% & 2000: 13.5%.
