Who thinks that making wine this way is a good idea? I'm glad there is someone crazy enough. Highly recommended and could certainly age for some years.
Pinot noir rosé, very short maceration, 4 years in old barrels before bottling for secondary fermentation. No sulphur, viticulture is organic & biodynamic. Left undisgorged in the bottle until its drank. Madness.
Bought in Italy 4y ago, wasn't holding my breath...My expectations were so wrong. Elegant bubbles going strong (no sign of going flat), intense bready and rich bruised apple aromas. Concentrated palate with great structure (high acid). A little touch of funk, but in no way a fully-oxidised style (what I was expecting). Fruit still has a fresh edge to it and is in no way dominated by the yeasty richness.
