Personally feel that its not time to drink yet unless its bottle variation. Theres strong note of barnyard, wet forest, ripe red fruits. And on the palate, theres still ‘bubble’, the last I experience this was during barren tasting or its still evolving?

Dinner at restaurant Noma (Copenhagen): Reduction (blocked drain) tumbles up the glass, but a lot of aeration helps the wine developing very positively in the glass. At the same time the fruity aromas decline in the glass, so on the other hand don't spend too much time with the glass. Some bitterness, med. tannin. Typical natural wine.

Initially a whiff of horse that blows of with air. Ripe blue forestberries and black cherries. Excellent stuffing of fruit, adequate freshness, ripe tannins, silky mouthfeel, and no heat on the finish (13% abv). Not the most typical volnay as this vintage leans towards Syrah aromatically, but what a delicious wine! Cossard's wines - most of them completely unsulphured - are often precocious to evolve, so probably mature enough in five years? (Disclaimer: ITB with Swedish importer Vin & Natur)

Second bottle so far. Pronounced nose with notes of mushroom, unami, forest floor, red fruits. Medium+ acidity and medium tannin. Very enjoyable.
