Lovely wine which I have enjoyed from the aperitif with oysters up to the big final with see bass in salt crust; it pairs well to all the options.. Yellow straw colour with very fine bubbles; on the nose note of green apple and croissant. In the mouth it's very precise, fresh and incredibly mineral.. still notes of green apple together with lemon zest and some pastry notes. Very long mineral finish. A wine to keep or drink now, for sure a wine to enjoy always! 😉 Highly recommend 🥂🍾

Well, interestingly, 6 months on, another bottle from the 9/2020 disgorgement didn't show so well. Drank it over two nights, but it didn't change significantly. I found this bottle to have an aggressive, persistent mousse and a sharp, tart attack on the palate which overwhelmed what yeasty, and unripe apple notes could be teased out.
I'm not sure if this is bottle variation or a phase it's going through or my taste varying or what, but I'm rather less impressed this time round.

Initially bitter. Took an hour to round out then developed sweetness with pure chalk. Very linear and focused. Solid champagne
