Always enjoy Ravines' Maximilian, and this one stays true to expectations. On the nose: graphite, pipe tobacco, black plum, black pepper. Flavors of oregano, thyme, tobacco leaf, cherry. Medium purple in color. Med body, med grippy tannins, med plus acid, med finish. Very enjoyable. Looking forward to trying the next one after more time in the bottle, hoping for a softer texture

Day 1- Cepage is 46% Cab Sauv and 54% merlot, but it tastes like 40% Sauvignon Blanc(!!), 30% Cab Sauv, 30 % merlot. Dark reddish purple color with bright transparency at the edge. Strong vegetable aroma of chopped tomato leaves/fruit, green grass, and unripe grape-seed spiciness, on top of the moderate/typical blackberry, cassis, pepper, and dark plum undertone. A lot of oak - burnt and raw wood, vanilla, with interesting popcorn-ish malty roast aroma. Strong laser-sharp acidity. Medium+ amount of tight dry tannin. Overall, tastes green (just before becoming unpleasant) and bright/refreshing at the same time. Hard to rate, interesting and well vinified for sure, but if Bordeaux I would say the equivalent is ambitious generic bordeaux or superieur. 88-89.
Day 2- no improvement yet. still lean, acidic, oakier than fruit. Some of the aggressive greenness is gone, also gone are the complexity. 87-88.
Day 3- conclusion: no improvement. Nose is rounded in a strange way - over-roasted and unripe coffee beans, and sun-dried tomato (not a pleasant combination). Palate is still thin and acidic. 86-87.

This is delicious! It paired perfectly with surf & turf at Sapalta on Seneca Lake. Well balanced, long finish, nicely structured. Would buy lots if I can find it !
