Very strange. Complex nose, not all bad: Bruised apple, tobacco, vanilla, nutmeg. But in the mouh there is a lot to dislike. Grippy tannins, but thin in taste, sharp acidity close to vinegar. Short. Apple cidre. Overall: too expensive for a mixture of apple cidre and apple vinegar. Not recommended. Did not develop well on day 2; even more apple vinegar. Rest of the bottle went down the drain.

Note is based on a tasting sip in the morning on day one and 0,1l filled in a bottle and sealed with argon gas drunk after 14 days. Nothing to add to my previous note. You either love it or hate it :)

Glass: Zalto Corked stone jug. Drunk over 3 day. 100% Sauvignon blanc, fermented with skins on its own lees. Unfiltered, hazy medium golden-amber color. Clean, medium+ intense and freaky nose: Apple must, pear, quince, soil, dried herbs, lots of spices (anise) and my wife smelled “cat pee”. Young, fresh, dense and complex, but certainly not for everyone. Dry, medium+ acidity. 12,5% abv. Lots of tannin that gives the wine a special grip and texture. Very complex palate orange zests, apple must, pear, quince, herbs, leaves, soil and very spicy. Great tension and grip! Still a tiny bit “fizzy” as if it had some residual CO2. Very deep and dese. Long, spicy finish. Freaky and certainly not made for everyone, but I like it every now and then. Potential? I can’t tell if it can age or is meant to age. I would drink it within the next 3+ years. 93-94
