My boss asked if I wanted to take this home or to the dumpster today. I chose dumpster initially, but she insisted I try it. After placing a good chill on it I was surprised.
I opened this as an unsaleable product at the store today. I was surprised to find that it was still drinkable. It has definitely lost it's "zazz", but it is not complete vinegar. I certainly would not have sold it to a customer, but having a glass before bed is not completely out of the question.
It has borderline neutral, waxy honeyed aromas. a touch of golden delicious apple, and upon swishing it around in my mouth, it oddly gives the experience of light tannin.
The color is frightfully gold for Gavi. It has retained it's acidity. I can't recommend going out and buying the '05 vintage from this producer, but it says something positive that it has enough structure to still be dinkable 8 years down the road.
I may even consider placing the current vintage in my store based on the staying power.

Sparking clear light yellow color. LIght tropical fruit nose..pineapple, apricot but also a significant plastic smell when bottle opened and first glass. This plastic smell was not present the next day spending the night in the fridge. High acid...good with food...stimulates the mouth. Slight oiliness to the mouthfeel. Tastes of pineapple, banana, apricot. Finish is abrupt, viscous, muddy.

Clear lght yellow, no shimmer. Banana, nectarine, & pineapple however slight on the nose. Palate is also lacking a bit and a little unpleasant acidity/petrol on the finish. (4+10+12+5) = 81
