What a splendid Aligoté! The style is so lean, completely opposite of say Emmanuel Rouget, and it’s very true to what you’d expect from Paul Pillot. The wine was opened an hour in advance and served blind. My guests guessed Chassagne 2019/20, and I think it definitely deserves the praise. Linear, mineral, and full of refreshing acidity. Drink now or keep for a few years, although I don’t see why you would wait.

Thats a bloody good Aligote from highly esteemed producer. Feels creamy, soft and well balanced. As it was tasted blind, I went for Chardonnay from Chassagne, it was not far fetched as at least I got the appelation right. Pale straw yellow. Aroma of peaches, yellow plums, smoke, chalk, vanilla, apples, mineral hints. Palate is smooth, focused and vivid, slightly oily texture goes in harmony with well integrated medium level acidity and flavours echoing aroma.

Pure class.
Etched nose of lily florals, lemon cream, oyster shell, smoky reduction, and a hint of wood (small % new?)
Bite of lemon wedge, Celery-like salinity, minerality, balanced acidity and length from a concentrated richness assumingly from smaller yields.
Beautiful and elegant. A great aperitif or pairing with oysters and celery mignonette.
