Sunday Dinner with Friends (Walt's House, Rancho Santa Margarita, CA): Wasn't a big fan of this wine based on the previous bottle but this one was better. Still holding on to the firm tannins so I decanted this for 2 hours then poured it back into the bottle through the vinituri, that seemed to calm it down. Although a red blend, the sangiovese and merlot are the stars of the show with their attributes showing the most. I would have guess right bank blind most likely.

Wine popped with significant cork bleed and stain. Dark colors on the cork. Out of the bottle was very acidic. Some lighter fruits were on the nose but not too much. The wine needed time and was given about 20 minutes while enjoying other things. Wine was poured a dark ruby red. Initial on the palate was acidic, with some mild blackberry and tannic structure that was fairly stiff. This wine is a combo of 40 cab, 20 merlot, 20 syrah and 20 sangiovese, so the oak barrel finish in the cab was a bit of a surprise in this Italian varietal, as cabs in supertuscan blends are typically a little more mellow. This tannic structure was welcome and the wine could stand on its own. With seared ahi tuna, the spiciness of this wine started to come out, and that was the first breakthrough from the initial acidity. After 35-40 minutes the wine started to show its deeper colors, showing ripe blackberry, black cherry, with a softening on the palate and non-acidic finish with firm tannin. Finish did not last on the palate. A nice, clean and crisp wine, but if you drink it now, please give it ample time to open. This one can go another 2-3 years.

This one surprised me. I wasn't expecting much but am really enjoying the bottle. At first tast it was full of earthy grassy maybe even composty tasts and smells. After an hour the fruit has come through with a nice bit of tannin to round it out. Dark in color.
