At The Vault, a local wine bar: two years have passed since I last tasted this wine. Color has changed from light yellow to gold, and bottle age has given it impressive depth. Gloriously in its peak zone.
Light yellow hay color. Nose: Buttery toast... but with a slide edge: caraway... definitely rye bread. Taste: first taste was decidedly salty, sea salt, seaweed perhaps, but not unpleasant. Still something of a toast-like taste as on the nose. As it warms, has a bit more caramel sweetness and softer nose, but not too much. Definitely dry. Very interesting wine and glad to see a producer not going the typical chardonnay route. Loved this.

Tasted after 50 minutes of air. Medium yellow color. Pineapple fruit. Quince. Light floral. Not too much grassy notes that I usually get from sauvignon Blanc. Excellent balance. Quite a bit going on here.

Day 1: Amazing again. 2019 rockstar and this is no different. Might be their best wine. Slate, dust, white flowers, grapefruit, pear, sour apple and chalk. The mineral elements on this wine are off the charts. Under $30 would rival anything Bordeaux is doing here. 94 points Day 2: So, drinking this wine at the recommended tasting temp is a joke. It does not blossom until it gets close to room temperature. Wonderful again on day 2 featuring white flowers, slate, dust, orange peel, grapefruit, spice and chalk. Complex wine and medium plus finish. Nice acidity. One of the best white wine values for under $30. 94 points Recommendation: Buy it!
