  First sip (COLD) - bitey - but minutes later, not at all - smooth, crisp, dry
  With chicken caprese - pleasant, crisp, dry; fiddleheads - a little bite; wild rice - slightly sweet.
  
  Next evening: COLD/alone - dry, metallic; perhaps 15 minutes later, with lightly spiced crab cake - some heat; asparagus - dry, tart; garlic toast - fruit with light heat on top
