Community Tasting Notes (2)

  • A Taste of Aspen; 3/27/2023-3/29/2023: Light yellow. Extremely complex aromatics-citrus, high toned distillate, florality, and botanical herbs. Just the nose evoked aquavit and Sauvignon Blanc at times. Medium bodied, dry, penetrating acidity, and powerful. Grapefruit and herbs are joined by more tropical guava and a soil-filled finish. Very young but exciting wine that leaves the palate aquiver.

  • Tasted at opening and then revisited a week later from a sample poured off and sealed without airspace for serving at a Zoom tasting discussing the winery and its vineyards

pale lemon color, aggressive steely nose with loud whispers of white flowers and melon, on the palate saline tones, primary floral and orchard fruit notes with a Chablis-like core intensity, topnotes of steel, a great power of fruit on the palate that is almost mute but suggestive of grapefruit and melon, lemons, fine long finish with firm metal notes, this has an almost chewy intensity but the flavors are subtle and lean, racy, a week later with 2 hours of airing out of sample bottle- baked bread notes on the nose, pointed note of slate, on the palate refreshing waves of saline over a now tight fruit core, peach stones, melon, honeysuckle, fully dry throughout, long and lean with hints of the moodiness that brews underneath its calm and youthful exterior, long pure slate finish, focused, purposeful, intense aftertaste of citrus and stone that lingers with uncommon persistence, this is so singular that it is hard to predict just where it will go in time- but I am quite confident I will be happy when we get there.
