  • Nicely combines vintage richness with classic Chablis minerality and energy. Elegantly framed with good volume for its level. Good now but upside from here.

  • I thought I'd open a bottle of the current release of de Moor Chablis. The Chablis L'Humeur du Temps comes from 3-4 estate parcels in and around Courgis that the de Moors planted beginning in 1995. The farming is biodynamic and certified-organic and the harvest is by hand. The fruit is destemmed, gently pressed and fermented spontaneously with indigenous yeasts; the parcels are vinified separately. The wine goes through malo and is aged on its lees without bâtonnage or racking in a combination of used Burgundy barrels and 2500-liter foudres as well as enamel-lined steel tanks for almost a year. Bottled without fining or filtering.

    Colour straw gold. A bouquet showing Chablis typicity and no oak imprint. Grapefruit, green apple, oyster shell, green herbs, peach and a hint of honey. In the mouth, a very crisp, dry entry. Then intense, powerful, tart acidity. Very bright and primary and - unsuprisingly, this young - the acids a little sharp and aggressive. Pure and clean. Lemon citrus, rocky minerals, green apples, peaches, chalk and spices with touches of beeswax, vanilla and seaspray. Fruit weight and structure. Classic, traditionally made, artisan, almost old-fashioned (in a good way!) Chablis. No oak imprint. Moderate alcohol (12.5% ABV). Needs a few years to settle (drink from 2025).
