The other tasting note is on point! Had it with butter scallops. Crushed seashells, sea weed, some salinity. Light lemon as well and a medium to long finish. I also notice some tree moss, sage and dead leaves. Amazing quality here! Wish it was easier to find!

The last Bessin I have tried was the 14 Fourchaume a few years ago, so I was excited to give this a go based on how well that wine showed. Lots of good news to report back, especially for the Chablis purest: Loads of oceanic material hit right away, sea mist, tide pool, and good thing too as Dungeness Crab was on sale locally for $8.99 for the whole crabs. So with 3 crabs shelled this was a perfect accompaniment with just a squeeze of lemon and a tab of Pike Place Markets Cocktail sauce (for the kid in me). Anyway, this was really strumming along with a more geological back half and finish. Great. I was almost ready to re-order a few more bottles but I am so beyond capacity that I just have to stop buying. That, and I would have liked to see just a wee bit more staying power on the finish, but a very minor quibble. Lovely, classic PC Chablis here.

Still green and stemmy. Time hasn’t resolved it.
