  • Domaine Bois D'yver is located in Courgis, and the estate belongs to the father of the iconic winemaker Pattes Loup Thomas Pico, who manages that portion in parallel to Pattes Loup (his mainstay). This domaine only offers AOC village Chablis, but Thomas feels that this area can represent and create wines under his winemaking style in a way that reflects the sense of place. I would say the profiles of this wine matched the non Vente D'Ange Chablis of Pattes Loup (and non mise tardive), although I prefer the Mise Tardive Pattes Loup wines far more as there is more fruit to balance the pungency, acidity, and strong savory components. The profile is not typical Chablis, and has a nose of pickled lemon, unripe pear, and quince, and notable salinity in the mix. It is a style I am not used to and can be very linear in a way, but is certainly better with food. Unfortunately not even a great match with lobster or raw oysters, which is a shame.
