Another vintage of classic aged Chablis from this house, more expected in this vintage than what they miraculously did with the hot vintage ‘05s. While their ‘05s softened considerably with time, this has retained laser (almost searing) acidity. Acid freaks (like me) can revel in this on its own or enjoy it with everything from oysters to creamy chicken, pork or seafood dishes. Cheers! 90+

This is exactly what chablis should be. I am so happy, as I have had several chablis this year that have been disappointing. Not this one. Green-tinged light yellow-gold. Nose is all mineral and stone with some citrus and sea shell. Crisp, but not austere. A hint of oak more in the palate feel than flavor. Could use a touch more acidity. For $20, this is marvelous. My chablis for this summer! (and next, too, most likely). (91 - 92 pts)

(Domaine Bernard Defaix Vaillons Chablis) #3; COLOR-light golden; NOSE-coming through w/ a smoked wood component; a sense of unpaved gravel; a hint of pear; very pretty nose; TASTE-no Oak or Vanilla here; very crisp, concise & focused Chardonnay; really nice light & focused apple; good acidity; a little flabby on the mid-palate, but well made Chardonnay; good length; good balance; solid bottle; AM-88/90; GV-89
