Golden color. Aged hard cheese mixed with semi-soft cheese nuttiness on the nose. Interesting but far more savoury at this stage, filled with tertiary notes with little to no fruit left to speak of. However, no signs of any sour apple oxidation which was in itself impressive.

Minerals but not much fruit.
Tart and goes well with seafood.
