Chablis (Prince Sydney, 40 Hansard Street): Lemon, struck match, a little green apple, floral top notes, more of the same on the palate, softly textured burr, juicy acidity, simple. Nice.

Immediately bright and engaging. Fresh orchard fruit aromas and flavours with some saline minerality and white flower notes. Perfectly balanced and completely refreshing. Should age well over the mid-term but so delicious now.
