Day 1: subdued red fruits. Elegant, but not a ton of depth. No note taken. Returned 1/2 bottle to the refrigerator. 90+ Day 5: Wow. This had quite a bit of depth. Red fruits and whole cluster notes. Clean. Sit on these until 2026+. 93+

Dinner at 312 Fish Market (Chicago, IL): Very nice nose here -- perfumed, strawberry-adjacent, and almost like a good, weighty summer rosé. The palate's a bit thin, and there's definitely a slight underripeness here that leaves this feeling a bit empty. One of those wines where the nose is much better than the palate. Quite pleasant -- better as a chilled summer red.

Enjoyable bottle of German pinot. Elegant, balanced, maybe not the most complex but overall quite good. Price may be a little high, but you could do worse in Burgundy for the money.

As other reviewers have alluded to, this has a very elegant/floral nose, but didn't translate very well to the palate. Perhaps this is too early to open it - but with air, the residual heat came down and the wine ended up being quite smooth, but still not to the level that you would expect from the nose.
I did hear that the '22 vintage onwards is better, so I am very curious to see the evolution of this wine and future bottlings, and with the way the climate is changing, I imagine would favor German Spatburgunders in the future and maybe help accelerate the growth/development of this wine. It was fun to try but didn't quite have the depth or complexity of other wines that night.

Agree with the other reviews. Floral but too light, needs more stuffing. Overnight in bottle did not help.
