Sourced from a 25-acre flinty hillside vineyard, fermented in stainless steel and precluded from undergoing malolactic conversion, this wine was then aged sur lie for five months prior to bottling. What has resulted is a limpid, light-golden Sauvignon Blanc with an attractive aromatic array of lime zest, quince, white peaches, chamomile and wet stones. Medium-bodied, freshly acidic and without alcoholic heat (13.5%), it delivers a flavor profile that mirrors the nose. Solid in the middle and medium-to-long on the back end, this is everything that it should be. Ordered from a restaurant's wine list and consumed over two hours, it was immediately expressive and a beautiful companion to chilled poached lobster. Enjoy it over the next 3-4 years.
