Pure Spirits Champagne portfolio tasting (360 restaurant): The fruit feels riper, cherry notes, fresh, nectarine, peach
In the palate, the wine feels full on ripe, strawberry, cherry, peach, med to full body, very creamy, nice acidity, long finish

Pleasant and correct but boring; almost clafoutis like in its red fruit and brioche but there’s really not much there. Followed closely for a couple of hours and revisited later in the evening without improvement.

This was excellent stuff. Vinous and delicious but vibrant at the same time. Definitely get some redder fruit from the Pinot but also lots of earthy and mineral notes.
