  • Old leak and level 4.4cm below cork. A lovely bright medium yellow with a green tinge, but over an hour later it loses the green and the yellow colour deepens. Yellow stone fruit and lifted, slightly spiced tropical fruit nose reveals hidden layers as it warms, with wax, delicate citrus and candy. Lightish body with vibrant ripe yellow fruit in great abundance, with the tropics having even greater impact. After an hour or so, it mellows and the length improves. This is drinking really well as it warms to about 14°C. On the 3rd day, from a half, without any written record made, I do specifically remember that there was a small, older ginger theme developing. Fine, even for this bottle in its compromised condition.

  • Heater week; 3/26/2023-4/3/2023 (Chicago, IL): #02-08, 8% abv. Under screw cap. Ugh, why didn't I buy more Kabinett to age? Fantastic. Electric, exciting, and plenty of acidity. Doesn't show the opulence of the ripe vintage, but you do get some ripe fruit to couple with all the acidic elements. Drinks so young -- this seems like it's been stuck in time. Not as minerally and stony as I would expect versus a Domprobst.

  • Under screwcap. Ready to go. Slightly overripe apple, white peach and pineapple meet slate, white flowers and kerosene. Probably lacks a touch of acidity and zing for me, but I’m being picky. It’s a very tasty Kabinett.

  • Apple, white peach and honeysuckle dominate light citrus notes. There is some slatey, minerally action, but the sweetness slightly overrides the acidity at the moment. Good weight and concentration for the level. So easy to drink.

    (Willi Schaefer Graacher Himmelreich Kabinett #2) All green apple on the nose with some exotic tropical elements and loads of slate. The palate was pretty full-bodied for a Kabinett but did have a nice elegant wispiness and intense crunchy sugar on the back molars. On day three this really came around as it developed an elegant midpalate and the flavors were more well defined and harmonious. It can age for up to ten years I would say but it is in stelvin closure so not sure if that will make it age not as long. I have one more and will see.
