Nose: Dried apricots, honey, almond, grape seeds Notes: still a bit of bubbles, this bottle is in excellent condition. Wonderfully complex aftertaste with a good nose of dried apricots and honey. This has a very interesting grappa kind of aroma to this. It's hard to say how many years of life this has left, I can conclude that this wine has probably reached the ideal drinking age quite some time ago but is still quite lively now. Vinum WSET3 Celebration: [Vinum WSET Passing Celebration] From magnum. Cork came off without much resistance, but wine turned out just fine. Gold rims, lemon core. Candied hazelnuts, salinity and minerality, dried aromatic lemon peel, toast and pastry, hazelnut noisette. Still showing a faint, but incredibly fine mousse, bubbles are fading. Really well balanced, complex, and just delicious. Has all of the candied oxidative notes for this style of Champagne that you want with age. Fruit is still showing in balance with the tertiary development, definitely has not gone too far yet. Really delicious!

Beautiful wine. Bubbles in column. Fresh with light but delightful toast and brioche flavors. Medium body without any heaviness. Some zesty lemon notes. Very nice finish.

Fully mature, this explodes out of the glass with toffee, coffee, roasted, caramel notes. 1989 was a very hot year and it shows in the level of maturity in the fruits you get on the palate. This is drinking well now, no point in keeping this much longer, as the acidity level is not super high.

Bollinger at The Capital (Nathan's outlaw at The Capital): Colour as per the 90. Spicier on the Jose. Lovely acidity. Really quite vinous and very mature. Just a little spikey perhaps. ***1/2
