  • Dinner at Moomba (The Moomba, Circular Road): First of three very different Chardonnays on the night, and my last bottle of this bubbly. Thankfully, this was an excellent showing. Lovely nose, very fruity and attractive, with yeast tones and a little white meat wed to flowery tones and fruity red apple scents. Some sweetness on the bouquet suggested that this was not entirely dry - an impression that was taken up on the palate. As always, this was nicely balance and had a lovely sense of elegance on the palate, with a fresh verve and a light frothy bead. Lots of Chardonnay apples right from the attack, with a yummy, almost cider-like fruit-sweetness to it, along with ripe lemons and a touch of flinty mineral that strecthed out at the finish, where the Brut dryness of the wine finally showed a bit. I must say that the wine showed altogether lovely fruit though. It may not have been the deepest or most complex Champagne, but this was all about lightness, balance, charm and deliciousness. I really liked it.

  • Symmetry Dinner (Table 66 at 66 Tras St): Sweet ripeness on the nose . Very comfortable and approachable. A pleasant introductory champagne that any first timers would like. Rounded supple white ripe fruits.

  • Symmetry Dinner (Table 66, Tras Street): Very nice, elegant Champagne. Not quite the complexity and depth of the vintage Laurent-Perrier, but this was delicious and very fun to drink. Nose was rather attractive, with earthy tones, yeast, white mushrooms, white fruit, sweet flowery notes and flecks of nuttiness and stony mineral. Lots of elegance on the palate, with a pleasantly frothy mousse and beautiful balance in the mouth. Not the most complex with its white fruit tones, sweet ripe lemons, green apple and little sprinkle of mineral, but very yummy, with lots of friendly charm. A real crowd pleaser. Finish was decent too, with a little minerally linger. This was just a beautiful pairing with the smoked salmon and caviar canapes that we ordered. It would benefit from more time in the cellar I think. Just a single bottle left. Will keep that for awhile hopefully.

  • Dinner with Monthly Group (The Lighthouse, Fullerton Hotel): I accidentally pulled out the bottle that was disgorged a little later I think, so this was somewhat tighter and less giving than the other bottles I have tried. Certainly better in a white wine glass than a flute though. Nose showed like a slightly aged Burg, with nuts, earth and mushroom along with some white fruit. Quite lovely. There were bits of sulphur in there somewhere, but those blew off in awhile. Palate had fine, lacy bubbles, lots of racy acidity and rich Chardonnay flavours of white fruit and cream. Towards the mid-palate, tons of mineral started emerging. I liked the cut and definition on the wine, but it was a little stern until it hit the midpalate, where it fanned out into herbs, mushroom and nut flavours. Really dry though, with that streak of acidity running all the way into the very end.
