Dinner at Sun Wah (Sun Wah BBQ - Chicago, IL): Lots and lots of apples...both on the palate and the nose. Thought the palate was a touch round but at the end of the day this had enough acid to taste fresh.

Tastes and smells like sliced, juicy red apples wrapped in pastry dough, undergirded by a faint chalkiness. A little sweeter than I like my champagnes, but altogether, this was a rich, well-crafted champagne that my wife and I enjoyed all New Year's Eve.

Aroma initally gave off a heavy toasted bread type smell, as well as a bit of nuttiness. The taste was very similar. After letting sit during dinner for a little over an hour, the taste had much more of a tart & acidic finish, such as lemon.

Popped and poured with creole chicken. Aroma has a toasty, nutty note to it. Taste has green apple and the toasty/nutty combo
