  • I was impressed enough with the base level bottling from this producer, earlier this month, to try this 1er. Likewise, this Chablis captures my interest, at least initially. Upon opening, it's rather taut and steely, showing lemon curd, an odd but intriguing note of cardamom, and a hint of butter creme. With air, the Chablis wool and seashells come out, alongside the hint of butter. Quite nice. Compact now, but I think there's room to grow and broaden. After a couple of hours, however, the wine falls somewhat flat. It loses its tautness and tension, and sits in the mouth rather round, lacking in energy. Began well, then softened. I've read that the base level Chablis is all-stainless, whereas some of the 1er Crus see oak, so perhaps the oak has rounded it too much - if in fact this wine saw oak; I don't know. Apart from the butter, roundness and loss of acidity, I wouldn't say that this wine shows excessive oak attributes. I'll see what happens overnight. UPDATE: On the second night, initially there's some energy and tension, but it seems to be all up front. Not that impressed.
