Dim Sum Club at Summer Pavilion (Summer Pavilion, Ritz Carlton, Singapore): Mature and ready, this was quite delightful - even if it did not have much of a Chambolle character. Each fresh pour was actually quite stinky, smelling a bit like chicken droppings. Thankfully the funk blew off with time to show more pleasant notes of cherries and earth on a bed of meaty, gamey funk. The palate was showing well too - savoury meat, game and spice dusted over a core of dark cherries making for a yummy mouthful, all this lined with sinewy, slightly powdered tannins, and clean, fresh acidity. A touch rustic, but very classic and impeccably balanced, with a lovely fresh feel and a nice transparency to it. There was that sinewy, slightly lean underpinning of a 1995 wine, but this was far from mean or stingy. Good long finish too, with fruit, funk and meat riding away on a bed of earthy mineral notes. Very nice, and drinking at something near peak.

Nose is a 96. Palate falls a bit short though, more like a 90. Nose is cherry coke, fresh cut grass, herbal. Mouth is good acid, rounded, a bit tart. Popped and poured and drunk over 3 hours. Nose continues to evolve and deepen, but the palate seems to get weaker. Decided to solve the dilemma by drinking it.

Earthy and dark red fruits on the nose. Not particularly complex but palate was balanced, lightly meaty and red currants with drying finish.
