Green pepper, black fruit, chunky tannin and slightly blocky structure. Overall has aged very well and give some nice earth driven fruit and garden vegetable notes. Just lacking some refinement. A solid aged Fisher cab.

BBQ at The Papies (The Papies, Elizabeth St, London): Opened and served albeit is a wine that we would definitely have decanted under normal circumstances. Makes no apologies about being a Cali Cab, from the ripeness of fruit to the power presence on the palate. But this is no Cali Cab monster and definitely the age in bottle ( Another proof that we drink Cali Cabs too early) helped this wine develop an elegant side and drinks very well now. Firm yet round tannin, good ripe fruit, layers and layers of it but with good acidity to keep the wine in balance. This is not for the lovers of soft wines but is definitely a very good wine for the style. Underrated too. Good 92 for now but with lots of life left in this one.

Deep garnet in color with bricking edge. An austere nose of stewed tomatoes and tobacco. Tastes of strawberries, cigar box, leather and earth. Light on fruit, but still considerable tannic grip. Past its prime, but still enjoyable.

Very much like a Pauillac. Youthful in appearance and taste. Dark fruit, cedar and band aid, and a finish that doesn't quit. I wish the alcohol was a little lower as it stood out, but other than that, it was delicious.

Aged meat and Aged Cabs (Mister Fister's, Chicago IL): Nose: Very well balanced and aromatic nose with tones of black currants, dark red cherries, licorice, vanilla beans, spice tones, and some perfume tones. There is nice depth with a plushness to the tones.
Taste: Full bodied with medium acidity and youthful tannins. The tannins aren't overpowering, but provide good support to the tones of black currants, dark red cherries, licorice, vanilla beans, and spice tones.
Overall: This is a real quality Cali Cab. There is nice depth to it with a richness as well. It was a far departure from the older cabs, but it still showed very well.
