  Great example of bubbly shiraz. Still some black fruit, secondary characters coming through. Beautifully balanced finish, the wine of the night.

  Very dark. Kalamata olive on the nose, with a hint of leather. Very persistent mousse. Bone dry on the palate, with balanced acidity and a touch of tannic bitterness. Quite full-bodied for a sparkler, yet still a bit closed - lots of dark fruit lurking behind the bubbles, changing to cola/campari on the midpalate, and ending strong with notes of nicely maturing shiraz (the leather and black olive detected earlier on the nose). This should be quite good with more time.
