This seemed younger in flavors as the old wine flavors were barely noticeable compared to bottles consumed in 2007. The texture was richer/rounder rather than the suppleness of 2005-2007 bottles.

Bubbles/Fritz marred what probably would have been a good wine. There was plenty of high toned cherry fruit left but it was hard to notice the usual liquorish/tarragon I've noticed in prior bottles of Evesham Seven Springs. It was okay to drink as the fritz was not overpowering but the usual wonderful flavor profile was masked, making this a so-so bottle. It also didn't do wonders with food as bottles have.

This was very similar the last bottle I drank (on 2/12/09): This was bigger bodied than all but the last bottle (that I drank 2/12/09), though still nicely balanced, with the usual high toned cherry flavor and liquorish/herbal flavors (mint or tarragon). This seemed younger in flavors as the old wine flavors were barely noticeable compared to prior bottles. The texture was richer/rounder rather than the suppleness of prior bottles. As usual, this is okay as stand-alone bottle but really shines with food - in this case salmon and veggies.

Drank this with a moderately Pinot friendly meal of grilled Salmon and Mediterranean salad, humus, cous cous, etc. This was bigger bodied than prior bottles, though still nicely balanced, with the usual high toned cherry flavor and liquorish/herbal flavors (mint or tarragon). This seemed older in color yet younger in flavors as the old wine flavors were barely noticeable compared to prior bottles. The texture was richer/rounder rather than the suppleness of prior bottles. This did not seem to pair as gracefully with food as past bottles but that means it was good as opposed to great with food. All in all, quite pleasurable and very identifiably Seven Springs in flavor but with a slight notch less complexity, subtlety and suppleness of prior bottles.

Pinot friendly meal of Salmon and steamed/roasted veggies. Very similar to last bottle but seemed a bit fuller/richer than usual. Very hard to stop drinking and I got a bit tipsy . . . Again, this seems like it's in a very nice place so I will likely drink most of my remaining bottles over the next year.
