Color is a yellow golden. Fantastic nose of truffles, crimini mushrooms, kombu, and chamomile. With air, it becomes a touch more linear with some minerality, and a bit of citrus. The palate is quite similar - extremely umami driven with mushrooms and seaweed. The gains some lift over a few hours in the glass, finish is long and savory. This bottle was at peak now - no reason to continue to hold, and based on color, I don't see much upside. Delicious. (2514 views)

 Tasted by drwine2001 on 9/24/2019: Eclectic Older Wines from the Rare Wine Company with Mannie Berk (The Morris, San Francisco): Deep yellow. Truffled aromatics with some bitter citrus. Medium weight. Typical oyster and saline elements with outstanding acidity. As older Dauvissat wines often do, this freshened over time, but for me, it never caught up with the Raveneau example from the same vintage. (3060 views)

Still a touch of reduction on the nose initially, combined with mushrooms and lemon rind. So vivid and pure, this particular bottle is incredibly fresh still.  Tasted by Dale M on 2/11/2018: My last note in 2011 indicated I should drink my last bottle in the next couple of years; I should have heeded that advice. The color looked good from the initial pour, so we were out of the woods on the pmox front, but after a few sips it just became apparent this bottle was just a little tired. Good enough to drink though, some tasty oatmeal and a certain sweetness that worked well with some smoked albacore and cheese apps. I will add though that my last glass seemed to gain a little life and the faint oxidative quality seemed to dissipate. Go figure. Still, I wish I drank this sooner. (2099 views)

 Tasted by Nanda on 9/21/2016 & rated 88 points: A fine Chablis, but I suspect I would have enjoyed this as a younger wine. The nose was a little shy and a bit funky/earthy without the bright orchard, citrus and seashell Chablis notes that I enjoy. The palate was still fresh with a good balance of fruit and earth components. On the back nine. I would drink sooner than later. (2415 views)

 Tasted by acyso on 9/21/2016 & rated 90 points: Dinner at The Cotton Duck (Chicago, IL): The nose is demure on this bottle, but the palate is much better. At first there's a slight bit of reduction, which eases off into some sweet stone fruit. The palate doesn't show that character, and instead you get a nice crisp minerality balanced with juicy stone fruit. On the other hand, the acidity doesn't seem to be that racy here, and this doesn't quite have that crystalline Chablis character you might want, and the inorganics seem to veer more towards dirt rather than mineral.  Tasted by acidqueen on 12/26/2015 & rated 93 points: Deep yellow color. Honey, nuts, and overall richness, but also with an acid cut and bright citrus, stone and saltiness that makes it unmistakeably Chablis. Some floral notes, especially elderflower. This was an outstanding bottle. The wine is in its prime, and no signs of fatigue at all. Glad I have two more bottles and will hold on for a couple more years. (2095 views)

 Tasted by drwine2001 on 10/30/2014: Medium tulip yellow. All truffle honey at first, but with an hour of air, its essential Chablis iodine and oyster shell shone through. Rich entry with fruit there that is difficult to characterize; this segues into a finish that is full of crisp acidity and minerality. As it opened, it continued its transformation from a wine that could be confused with a creamy Grand Cru white Burgundy into a more and more easily recognizable Chablis. Fully mature, although much more alive than other bottles I've had over the past few years. (2531 views)

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
